Who can see my Workflow Maps?

Only your account. Every Workflow Map is tied to the email that generated it, and every view, revision, added service, and export is checked against that ownership. There is no shared library, no public gallery, and no way for another account to open your maps.

The one thing built to share

The share image is the one thing designed for the outside world. It carries your counts only, never workflow content. You can post it anywhere without exposing a single line of what your maps contain.

Private by structure, not by setting. There is nothing to configure and nothing to lock down.
